Edith is the last in this series of our Mixed Fermentation Project and the first to use fruit. Edith is a Belgian Tripel that has been soured in oak wine barrels with lactobacillus for 12 months and then placed on apricots for three months. The result is a beer with aromas of sweet apricots and tart fruit as you approach the glass. Intense apricot flavours dance on the palate followed by tart notes which lead to a semi-sweet apricot finish with a lingering dryness.
